holiday hash browns
20 oz bag of shredded potatoes
1 finely chopped green bell pepper
1 finely chopped medium onion
2 T parmesan
1/2 t salt
1/4 t pepper
1 T melted butter
1 T oil
heat oven to 325. toss potatoes, pepper, onion, cheese, s & p. pour butter and oil into 9 x 13 pan. spread mixture in pan. bake uncovered 45 minutes, stirring once. sprinkle with additional cheese before serving.
