Blue Cheese Bites

Quick, Easy -N- Fast Recipes Blue Cheese Bites Recipe1/2 C. butter, softened2 C. crumbled blue or Gorgonzola cheese1/4 C. cooked bacon, crumbled6 slices pumpernickel or dark rye bread6 slices Swiss cheese6 slices deli roast beef6 thin slices red onion6 dill pickle spears In a small bowl, beat butter and blue cheese until smooth; mix in bacon. Spread about 1/4 cup mixture on each slice of bread and top with a slice of Swiss cheese. (See Note.)Place on baking sheet and broil, 4 inches from heat source, until cheese is melted, about 1 minute. Top each with roast beef, onion and pickle and serve open-faced. Makes 6 servings. Note: Sandwiches can be prepared to this point and refrigerated three hours before serving.
 

Gooey Toffee Butter Cake

Cake:1 (18.25-ounce) box yellow cake mix1 large egg1/2 cup (1 stick) unsalted butter, melted Filling:1 (8-ounce) package cream cheese, softened2 large eggs1 teaspoon pure vanilla extract1 (16-ounce) box confectioners' sugar1/2 cup (1 stick) unsalted butter, melted1 cup almond toffee bits or chocolate toffee bits
Preheat the oven to 350 degrees F. Lightly grease a 13 by 9 by-2-inch baking pan. For the cake: In the bowl of an electric mixer, combine the cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside. For the filling: Still using an electric mixer, beat the cream cheese until smooth. Beat in the eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce the speed and slowly pour in butter. Mix well. Fold in toffee bits. Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point! Remove from oven and allow to cool completely. Cut into squares. Just remember that these wonderful cakes are very, very rich, and a little will go a long way.
 

Zesty White Bean Chili

Zesty White Bean Chilli

2T olive oil
1 onion chopped
1 T cumin
1 T chilli powder
1 clove minced garlic
1 4 oz can diced green chilles
6 Cup chicken broth
1 bay leaf
1 tomatoes chopped
4 cans white beans, rinsed and drained
3 cups diced ham
1/4 cup cilantro, chopped
2 T lime juice
salt and pepper to taste
sour cream for garnish


In a large soup pan, saute onion, cumin and chilli powder in olive oil for 3 minutes; add garlic and chicken broth and bring to a boil. Add bay leaf and tomatoes and reduce heat to simmer. Cover and cook 10 minutes.

Add beans, ham, cilantro and lime juice: season with salt and pepper. simmer for 30 minutes. Remove bay leaf, when serving top with sour cream.
