Citrus Quinoa Salad
- 1 cup fresh chopped pineapple
- 1/4 cup chopped scallions
- 1 orange, peeled and chopped
- 1 cup bell pepper (any color you like), diced
- 1 cup black beans
- 1 cup quinoa
- 1 cup candied pecans
- 1/4 cup sweet citrus vinaigrette
- 1/3 cup vegetable oil
- 1/3 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lemon juice
- 2 tbsp agave
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Sweet Citrus Vinaigrette:
Instructions
Add all of the salad ingredients to a bowl, toss with the dressing. Chill until ready to serve. Give it a quick stir before you serve it.
Can be made up to 1 day ahead of time.
Dressing:
Place all ingredients in a jar with a lid and shake for about 20 seconds.
Store in the fridge for up to 1 week, and shake before dressing salad.
