Penne with Zucchini and Basil


Ingredients
Instructions
  1. Cook penne according to package directions.
  2. While the penne cooks, in a large skillet heat the olive oil over medium-low heat. Add the chopped garlic, heating until it begins to sizzle, about 1 minute.
  3. Add the sliced zucchini, salt, pepper and red pepper. Saute for 7-10 minutes, or until the zucchini is crisp tender.
  4. Add the hot, drained pasta to the olive oil, stirring to coat. Stir in the grated Parmesan cheese.
  5. Season with salt and pepper or drizzle with additional olive oil, if needed.
