Pierogi and Black Beans
Ingredients:
- 12 cheddar & potato frozen pierogi (such as Mrs. T’s)
- 1 green bell pepper, seeded and chopped
- 1 medium onion, cut into rings
- 1 14.5 ounce can black beans, rinsed and drained
- 1 10 ounce can Ro-Tel tomatoes with chilis
Directions:
Prepare pierogi according to package directions. Meanwhile, in a medium, lightly oiled skillet over medium-high heat, saute green pepper and onion until softened. Add black beans and tomatoes and heat through. In a large serving bowl, combine pierogi and sauce.
